A special Rosé from France perfect for this summer’s outings. This premium rosé – Invivo X, Sarah Jessica Parker Rosé originates from the South of France and was launched during the Covid pandemic in a virtual wine tasting on May 26, 2020, via Zoom, hosted by SJP, the winemakers, and wine.com. The Invivo X, Sarah Jessica Parker Rosé wine was available for purchase exclusively on Wine.com and then nationwide this summer – priced around $20. We recently spotted bottles of this Rosé wine at Fresh Market.

Award winning actor, producer, designer and entrepreneur, Sarah Jessica Parker (SJP), is adding to her collection of wines with New Zealand-based winery INVIVO & Co. Invivo X, SJP Rosé will be available just in time for summer sipping – a new rosé wine to try.

A Little Background

Invivo X, SJP Sauvignon Blanc was SJPs first wine collab and one of 2019’s most successful wines with retailers around the world including Costco and Total Wine carrying it. Updated as well for 2020 Invivo X, SJP Sauvignon Blanc will also be presented at the Virtual Zoom wine tasting launch for Invivo X, by SJP Rosé. You can buy the duo bottle set at WINE.com

Invivo X, by Sarah Jessica Parker, was created with New Zealand-based Invivo Wines, in what Parker describes as a very collaborative process. This collaboration covered every aspect of the new wine, from naming and label design to the wine making itself.

Invivo winemaker Rob Cameron explains: “This wine is 100% Sarah Jessica Parker. I’ll be taking a back seat and let her create the blends.”

The final rosé blend was selected by SJP and Invivo over a December afternoon tasting and assessing in New York City. The result a new rosé that “can be taken very serious, but it also is very seriously fun”, says winemaker, Rob Cameron.

Winemaker Notes:

As Invivo’s winemaker Rob Cameron describes it, “Invivo X, SJP Rosé is a gorgeous shade of blush pink in your glass, which is what will initially draw you in, but it’s the taste that will bring you back for more. The aroma profile invokes clear rosé petals and bright summer berry characters, wrapped in a minerality that makes this wine exceptionally fresh. SJP Rosé is full bodied with great complexity and elegance, delicious on its own or with a range of cuisine.”

The Invivo X, SJP Rosé grapefruit originate from a vineyard in Provence on a family estate “Vins Chevron Villette”. Invivo X, SJP Rosé is all about expressing the very best of these Provence vineyards. With years of experience and tradition in wine making (dating back to 1184) this vineyard employs cutting-edge technology and strives to be eco-friendly by running the winery almost entirely on solar energy.

Blend: 45% Cinsault, 45% Grenache, 10% Syrah


FUN FACTS

The peach-hued pink is said to offer aromas of grapefruit, crunchy apple and nectarine, with a hint of sweet raspberry.

The critics at Wine Orbit in New Zealand have already given Invivo X, SJP Rosé 94 points and 5 stars, saying

“This is instantly appealing showing grapefruit, crunchy apple and nectarine characters with a hint of sweet raspberry. The palate delivers terrific fruit intensity and vibrancy, combined with fine texture and bright acidity, finishing delightfully long and refreshing. At its best: now to 2022

The grapes used in Invivo X, SJP come from the famous ‘Golden Triangle’, situated in the south of France and are are harvested only at night when the heat of the vineyard is at its lowest.

The latest optical technology visually assesses each berry. If it is not of optimum integrity, a micro-jet of air will remove what is deemed to be damaged or a sub-standard quality berry from the sorting process. This ensures only the cleanest, best fruit make it into this wine.

The X and the comma directly after it as the wine’s logo are an intentional and a personal touch, referencing SJP’s signature e-mail and Instagram post signoff: “X, SJ.” Sarah Jessica. Also the X on the original label was hand‑painted by SJP. As with the Sauvignon Blanc, she has taken inspiration from one of her colorways for the Rosé – this time ‘Pewter Stardust,’ which we think matches perfectly.

OUR TAKE

The Invivo X, by SJP Rosé is a good one for every upcoming summer event. Bring a bottle and you will be a hit – best served chilled. We especially enjoyed this wine after pouring it into a very chilled glass carafe. The Invivo X by SJP Rosé is a good alternative to Whispering Angel – a fruitier less dry alternative but still has that magical flair of Provence Rosé.

Tater Tot Waffles with Prosciutto and Mustard

Four 8-inch waffles.

Waffles are topped with prosciutto and mixed greens, along with a quick mix of créme fraîche and mustard.

INGREDIENTS

  • Nonstick cooking spray

  • 8 cups thawed frozen Tater Tots (32 ounces)

  • Flaky sea salt  [buy at Amazon]

  • ¼ cup Crème Fraîche

  • 2 tablespoons whole-grain mustard

  • 2 cups Baby Arugula

  • 1 teaspoon fresh lemon juice

  • 1 teaspoon extra-virgin olive oil

  • 12 thin slices of prosciutto

  • Thinly sliced cornichons ¹

¹ Cornichons are made with mini gherkin cucumbers pickled in vinegar and tarragon – can substitute small dill pickles

How to make this recipe

  1. Heat an 8-inch waffle iron; preheat the oven to 200°. Grease the waffle iron with nonstick spray. Spread 2 cups of the tots on it; sprinkle with salt. Close and cook on medium high until nearly crisp, about 5 minutes. Open the waffle iron and fill in any holes in the waffle with more tots, then close and cook until golden and crispy, 2 to 3 minutes. Transfer to a baking sheet; keep warm in the oven. Repeat with the remaining tots.

  2. Meanwhile, in a bowl, mix the crème fraîche and mustard. In another bowl, toss the arugula with the lemon juice and olive oil. Top each warm waffle with 1 ½ tablespoons of the mustard crème fraîche, 3 slices of prosciutto and ½ cup of the dressed arugula. Garnish with cornichons.
